A contemporary Japanese love story of Yamato nadeshiko and bushi unfolds in the design of Gyu-kaku & On-yasai, a unique restaurant concept by Vincent Chi-wai Chiang. Inspired by the concept of Yin and Yang, which represents the complementary and interconnected nature of opposite forces, this design showcases the contrast and harmony between two different types of cuisine.
Gyu-kaku Japanese Yakiniku Restaurant, a well-known brand, and On-Yasai, a new addition to Hong Kong's dining scene, serving Shabu-Shabu, are brought together in this project. The design emphasizes their uniqueness and contrast, with Gyu-kaku representing the masculine and strong, and On-Yasai embodying the feminine and soft.
One of the key challenges of this project was the limited space available for two different restaurants. However, Chiang and his team managed to create a flexible layout that accommodates different group sizes of guests. An adjustable partition was designed to increase privacy while maintaining the integrity of the overall space.
Stepping into Gyu-kaku, guests are immediately drawn to the iconic patterns inspired by bushi, the traditional Japanese warrior. The design also takes advantage of the restaurant's location, offering a stunning view of the harbor at night. Indirect lighting is used to reduce the reflection of the window glass, creating a more intimate and refined dining experience. The metallic materials and colors used in the design further enhance the concept of grill cooking.
In contrast, On-Yasai features a contemporary and light-touch design to create a more relaxed and approachable atmosphere. The aim was to reduce the feeling of meat and focus on the enjoyment of Shabu-Shabu. The design incorporates curved iron finishes to resemble Sakura and its trunk, representing the soft and yielding nature of On-Yasai.
Throughout the design process, Chiang and his team conducted extensive research, including site visits to Japan to study traditional bushi patterns and the history of old Japan's villages. They also collaborated with various suppliers to ensure proper ventilation and technical skill, without compromising the design aesthetics.
The Gyu-kaku & On-yasai project was completed in early January 2016 in Harbour City, Tsim Sha Tsui, Hong Kong. It has been recognized for its outstanding design and creativity, receiving the Bronze A' Design Award in 2016 for Interior Space, Retail, and Exhibition Design. This award celebrates designs that showcase technical and creative skills while contributing to improvements in quality of life.
With its unique concept and attention to detail, Gyu-kaku & On-yasai offers a dining experience that combines tradition with a modern touch, inviting guests to indulge in the contrasting flavors and aesthetics of Japanese cuisine.
